Ingredients
- (2) Chicken Breasts
- (1 cup) White Rice
- (1 cup) Quinoa
- (1/2 cup) Green Onions
- (1 cup) Shredded Carrots
- (1) Cucumber, sliced
- (1/4 cup) Teriyaki sauce
- (1 tbsp) Honey
- (1 tsp) Sesame Seeds
- (1 tbsp) Sesame Oil
- (1/4 cup) Rice Wine Vinegar
- (1 tbsp) Sugar
Directions
- Combine white rice and quinoa in rice maker with 3 cups of water (or use chicken bone broth for extra flavor/nutrients) and cook for alloted time
- Slice chicken breast into strips, place in tupperware or ziploc bag with teriyaki sauce, honey, and sesame seeds. Shake well.
- Heat sesame oil in a large skillet over medium-high heat
- Add chicken to skillet; ensure chicken is fully cooked at 165F
- While chicken and rice is cooking, slice cucumber the long way; add cucumber, green onions, and shredded carrots into a bowl and combine with rice wine vinegar, sugar, and massage well
- Once everything is done cooking, combine into a bowl and enjoy!
